Maricel E. Presilla is a double threat: a scholarly chef. Co-owner of Zafra and Cucharamama, two Latin restaurants in Hoboken, New Jersey, Presilla also holds a doctorate in medieval Spanish history from NYU and has spent more than thirty years traveling extensively throughout Latin America. In Gran Cocina Latina: The Food of Latin America (W.W.
