Maricel E. Presilla is a double threat: a scholarly chef. Co-owner of Zafra and Cucharamama, two Latin restaurants in Hoboken, New Jersey, Presilla also holds a doctorate in medieval Spanish history from NYU and has spent more than thirty years traveling extensively throughout Latin America. In Gran Cocina Latina: The Food of Latin America (W.W. Norton, $45.00 ) Presilla puts those impressive credential to good use in the form of more than 500 recipes from Mexico to Argentina and all the Spanish-speaking countries of the Caribbean. “. . . a comprehensible, intelligent, original, and delicious voyage.” — Jacques Pépin. Raquel Rábade Roque
Raquel Rábade Roque explores the unique intermingling of Spanish, Portuguese, Arabian, Chinese, and African traditions that combine in Cuban culture and its cuisine. The Cuban Kitchen (Knopf, $20.00) is encyclopedic in its range, but intimate and accessible in tone with more than five hundred recipes for classic, home-style dishes as well as the vividly told stories behind the recipes. Roque is the author of several cookbooks published in Spanish and English, including the forthcoming Cocina Latina: El sabor del mundo latino.
